Avocado Protein Brownies
Ingredients:
- 1/4 cup All-in-One Vegan Protein in Chocolate
- 1 ripe avocado
- 1 ripe banana
- 2 tbsp honey or maple syrup
- 3 eggs or vegan egg substitute (1 tbsp chia seeds and 1 tbsp water, stir to combine and leave to sit for 5 mins = 1 egg)
- 1 tsp vanilla extract
- 2 tbsp avocado oil (or coconut oil)
- 1/2 cup flour
- 1/4 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp sea salt
- 1/3 cup chocolate chips + 2 tbsp for topping
- Optional add-ins: nuts, seeds, dried coconut
Preparation:
- Preheat oven to 350° and grease a square or rectangular baking dish, line with parchment paper.
- In a food processor, add the avocado, banana, sweetener, eggs, vanilla, and avocado oil. Process until mixture is creamy and there are no avocado chunks remaining.
- This can also be done with a hand mixer, in a blender, or by hand with a fork or potato masher.
- In a separate bowl, combine All-in-One Protein in Chocolate, flour, cocoa powder, baking soda, sea salt. Whisk to combine.
- Add your wet ingredients to this bowl. Stir to combine. Do not overmix.
- Fold in chocolate chips and any other desired add-ins.
- Pour batter into the prepared baking dish. Top with more chocolate chips.
- Bake at 350° for 20 minutes, or until a cake tester poked in the middle comes out clean.
- Chill for 10 minutes, remove from baking dish, slice into squares and enjoy while still warm! These brownies will keep in the fridge for up to 3 days.
Tips:
- This is a great recipe to use those frozen bananas in your freezer!
- Top with flaky sea salt for a delicious sweet and salty treat.
