Protein Granola Bars

Preparation:

  1. Toast oats. Preheat oven to 350C. Line a rimmed baking sheet with foil and spread a layer of refined coconut oil or avocado oil on top to prevent sticking. In a mixing bowl, combine the oats and cinnamon until all oats are evenly coated. Spread mixture evenly on prepared baking sheet and bake for 10 minutes, stirring at the 5-minute mark.
  2. Finish the oats. Pull the oats from the oven and return them to a bowl. Sprinkle protein powder, cocoa powder, and salt on top. Add in any nuts, berries, seeds, or chocolate chips. Whisk to combine and set aside.
  3. Warm wet ingredients. In a small saucepan, combine seed/nut butter and maple syrup. Whisk constantly over low heat until mixture becomes warmed and viscous.
  4. Combine. Once the wet ingredients are ready, pour into the oat mixture and fold until the wet ingredients are fully combined with the dry.
  5. Press into bars. Prepare a rectangular baking dish with parchment or wax paper. Dump the oat mixture into the dish and spread evenly. Place another piece of parchment or wax paper on top and press down really hard on the bard with your spatula. The harder you press, the better they will stay together.
  6. Refrigerate and cut. Place the bars into the fridge for 1 hour to set. Once they are ready, slice into bars.
