Caitlyn’s Easy Muffin Recipe
This recipe makes approximately 12 regular-sized muffins or 24 mini-muffins, depending on your muffin tin size. This batter recipe also makes delicious mini pancakes!
Ingredients:
- 1 scoop KidStar’s All-in-One Vegan Protein Vanilla
- 4 eggs
- 2 ripe bananas
- 1 cup of raspberries, blueberries, or blackberries (optional)
Preparation:
- Preheat oven to 375°F and grease your muffin tin with butter, oil, or use your lining of choice.
- In a large bowl, mash 2 bananas.
- In the same bowl, add 4 eggs. Whisk until well combined.
- Add 1 cup of berries and 1 scoop of All-in-One Protein (Vanilla). Stir to combine.
- Pour batter into prepared muffin tin.
- Bake for 10-15 minutes until slightly brown.
- Remove muffin tin from oven and let cool for 10 minutes. Serve immediately with extra butter, or a drizzle of honey! These can be stored in the fridge for up to 3 days.
Tips:
- Cooking time will depend on muffin tin size. If you are using mini muffin tins, check after 5 minutes in the oven.
- Muffins will not rise as much in the oven since this recipe does not use a leavening agent! Height of muffins will depend on how whisked your eggs were.
- This batter also makes delicious mini-pancakes!
- Make the batter as instructed above.
- When your pan is hot, use a tablespoon to scoop the batter onto prepared non-stick cooking surface.
- When the outside of the circle looks set, use a spatula to flip your mini-pancakes (this won’t take long, so keep your eye on the pancakes to prevent burning).
- Serve with butter, honey, maple syrup, and extra berries!
