Our Classic Banana Bread Recipe

Preparation:

1. Preheat oven to 350°F. Prep a loaf pan with parchment paper.
2. Mash bananas, and mix well with yogurt, egg, and applesauce.
3. In a separate bowl, combine flour, KidStar’s All-in-One Vegan Protein, baking soda, salt, and cinnamon.
4. Gradually mix in dry ingredients until just combined; do not overmix.
5. Add in any desired nuts, raisins, or chocolate chips.
6. Pour batter into the prepared loaf pan and smooth the top. Tap loaf pan on the counter to prevent any air bubbles.
7. Bake in preheated oven for 40-60 minutes. Check the loaf at 40 minutes; if a cake tester does not come out clean, then put it back in the oven and check it every 10 minutes.
8. Let the loaf cool in the pan for 5 minutes before removing it. Let loaf cool on a cooling rack.

Tips:

• If you are going the Chocolate Protein route, amp-up the chocolatey flavour with 1 tbsp of cocoa powder (and don’t be shy with the chocolate chips! We recommend Enjoy Life Semi-Sweet Chocolate Mega Chunks or Mini Chips)
• If you do not have a cake tester, a wooden chopstick works just as well.
• When it comes to bananas – the riper the better! Ripe bananas add more flavour and natural sweetness to your finished loaf and combine easier into the batter. If you have any bananas in your freezer, this is the perfect time to use them.
